Egg Tostada with Loose Pesto:

Tostadas
Black Beans
Fresh Oregano
Fresh Cumin
Fresh Coriander
Toasted Cherry Tomatoes
Creme Fraiche
Cheddar Cheese
Lime
This is the home version for breakfast tostada. Fry some black beans with cumin and oregano, which makes a loose ‘pesto’ with oven toasted tomatoes, cheddar cheese and fresh coriander. Top the tostada with a sunny side fried egg. Some more fresh coriander, creme fraiche and lime and you are good to go. And don’t forget the hot sauce.
Grapefruit with Thyme & St. Germain
Ingredients
*St-Germain
*Prosecco
Grapefruits, sliced in half and squeezed
Fresh rosemary sprigs
In each individual glass pour about one ounce of St-Germain liqueur, add in juice from half of a grapefruit, finish off with an ounce of Prosecco. Garnish with rosemary sprig.
*For a non-alcohilc substitute, mix in one part club soda to one part sprite.
